Hearty Lentil Soup with Kale and Sweet Potatoes

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground turmeric
  • 1 1/2 cups green or brown lentils, rinsed and drained
  • 8 cups vegetable broth
  • 2 bay leaves
  • Salt and pepper, to taste
  • 2 cups diced sweet potatoes
  • 4 cups chopped kale, stems removed
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and sauté for 5-7 minutes or until softened. Add garlic, cumin, smoked paprika, and turmeric, and cook for 1-2 minutes, stirring constantly.
  2. Add lentils, vegetable broth, bay leaves, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes or until lentils are tender.
  3. Stir in sweet potatoes and kale. Simmer for 10-15 minutes or until sweet potatoes are tender.
  4. Remove bay leaves and stir in lemon juice. Adjust seasoning as needed.
