Energizing Quinoa Salad with Grilled Veggies and Avocado

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1/2 tsp salt
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 red onion, sliced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 avocado, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste


  1. In a medium saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until quinoa is tender and water is absorbed—fluff with a fork and set aside to cool.
  2. Preheat the grill or grill pan to medium-high heat. Toss zucchini, bell peppers, and onion with olive oil, salt, and pepper. Grill vegetables for 3-4 minutes per side or until tender and slightly charred. Remove from grill and set aside to cool.
  3. Combine cooled quinoa, grilled vegetables, diced avocado, parsley, and cilantro in a large bowl.
  4. Whisk together lemon juice, extra virgin olive oil, minced garlic, salt, and pepper in a small bowl. Pour dressing over quinoa mixture and toss to combine.

Serve immediately or refrigerate for later. Enjoy!
